A 2022 Stanford University study published in Environmental Science & Technology found that gas stoves can raise indoor nitrogen dioxide (NO2) levels to concentrations that exceed the EPA's outdoor air quality standards within minutes of ignition, even before food hits the pan. In Indian urban homes, where kitchens are frequently small, poorly cross-ventilated, and used for extended cooking sessions involving multiple burners, these concentrations can climb far higher than the study's baseline conditions.
