Hugely popular Glasgow-born salad bar chain set to open fourth location next month

A HUGELY popular Scottish salad bar is set to expand to its fourth restaurant after marking an important sales milestone.

Sprigg, which first opened in Glasgow city centre in 2018, announced on Wednesday that it is preparing to open a new site in the West End.

It comes after the business sold more than 100,000 bowls already this year from its three current locations.

The company described the move as completing "the final piece of the puzzle" for its Glasgow ambitions, with management hoping to target students and people enjoying a walk in Kelvingrove Park.

The new location will open on Byres Road in July, taking over the former Park Hi Tea unit next to health-drink and health bowl cafe Juicy.

Owner, Tom McDermott, said: “We’ve wanted to open in the West End for a long time and the opportunity finally felt right. This feels like the final piece of the puzzle for Glasgow

“This area is very different from the city centre. We’re used to serving office workers grabbing lunch quickly and heading back to their desks. Here, people move at a slightly different pace.

“You’ve got the parks, the students, the health and wellbeing community and people spending more time in the area. It feels like a really natural fit for Sprigg.

“This is the first time we’ve operated outside the city centre, so it’s a huge learning opportunity for us as a business.”

Sprigg's first location opened on Ingram Street in 2018, with the business expanding to a second venue on Sauchiehall Street in 2021.

Despite enduring the pressure faced by the hospitality industry during the Covid-19 lockdowns, the team was able to expand to a third location in 2024, opening on Waterloo Street.

If the firm hits its target of £2 million in revenue by 2027, the Glasgow-born outfit will have hit 100% growth since opening their third venue, according to the business.

McDermott added: "“The focus has always been on the quality of the food and making sure people feel they’re getting value, while being able to choose exactly what they want,” he added.

“We keep the entry point accessible with smaller bowls, but we make sure everything is packed with quality ingredients.

“A big part of our brand is how people are treated. We look after our team, so the team looks after our customers. The atmosphere our staff creates is a big reason we’ve developed a cult following.”
