London, New York, Paris, Copenhagen, Bangkok, Tokyo ... whichever you think is the world’s greatest food city, forget about it because your next go-to dining destination might not have a fixed postcode. No, Noma has not built a barge from foraged twigs or set up shop in the International Space Station (yet), but many impressive chefs and food experts are encouraging us to board cruise ships to experience very good fare.
Seems retro, no? Many of their menus are anything but. Aboard the new Celebrity Beyond by Celebrity Cruises, two-Michelin-starred French chef Daniel Boulud has crafted menus for several of the ship’s restaurants, including Luminae and Le Voyage. Meanwhile, Virgin Voyages has recently launched its Eat and Drink Month, in which Michelin-tipped chefs Matt Lambert and Brad Farmerie work alongside the likes of James Beard Award nominees Silvana Salcido Esparza and Sohui Kim on a range of menus to enjoy between Miami, the Caribbean and Mexico. Elsewhere, those aboard Crystal Cruises’ freshly spruced-up Crystal Symphony and Crystal Serenity ships can dine on Nobu Matsuhisa’s iconic sushi as well as his famed black cod. Over at the SALT programme on Silversea’s Silver Moon and Silver Dawn, James Beard Award- winning food expert Adam Sachs curates a cluster of on-board menus, cooking lessons and shore excursions with chefs including Danièl Madsen, and Franco Pepe’s famously brilliant suppliers. And finally, Mauro Uliassi, holder of three Michelin stars and whose seaside Uliassi ranked 12th at The World’s Best 50 Restaurants, is cooking up a storm on Explora Journeys’ Explora I.
