New high-end sustainable steak restaurant plans to open in Cardiff

A sustainable mixed-grill restaurant has revealed plans to open in Cardiff's St David's Centre, selling 'carbon neutral beef and Argentinian wine.' Gaucho, a high-end chain with restaurants across London, Leeds, Manchester, and Birmingham, could be coming to The Hayes after a planning application was submitted to Cardiff Council.

The restaurant, which opened its first location in London in 1994, says it takes its inspiration from Argentina "with a vision of bringing the world's best steak to the UK." The restaurant's beef comes from "premium Black-Angus cattle bred at hand-selected farms" in Argentina.

The Gaucho Carbon Footprint Project, "was born from our awareness of the impact we have on the planet and our commitment to quality" its website says. The company has partnered with beef supplier Rellman Foods to quantify and report the carbon footprint of the beef served at the restaurants.

The chain is also mapping the transport of beef from farm to table with an aim to offset beef carbon emissions and reduce emissions through "better land management practices and trialling new technology." The restaurant has 12 restaurants across London alone, with more in Birmingham, Edinburgh, Glasgow, Leeds, and Manchester.

Gaucho's extensive menu ranged from an 'Electro Brunch Feast' to a Sunday roast. Its a la carte menu features dishes such as marinated pork matambre and whole grilled seabass, alongside its sustainable steaks. As well as the classic rib eye, sirloin, fillet and rump cuts, the restaurant also offer its own speciality spiral cut steaks and large sharing steaks, all of which come in a range of marinades.

Alongside the steaks, you can order a wide range of sides, sauces, and toppings, including truffle mac and cheese, smoked chipotle BBQ sauce, and even a topping of half a lobster with garlic and herb butter. A planning application on behalf of Rare Restaurants has been submitted to Cardiff Council for a change of use of a retail unit at 19 The Hayes.

The application says that the new restaurant is expected to employ approximately 80 staff and will trade from 9am through to 11.30pm Monday to Thursday, 9am to midnight on Friday and Saturday and 9am to 10.30pm on Sundays.
