Interview: 'El Toque de Aaron': Chef Aaron Sánchez Dishes on Hot Latin Food Trends

Celebrity chef Aaron Sanchez is a culinary expert and a prominent figure in the Latin gastronomy scene in the United States. With two successful TV shows coming out soon, Sanchez is at the forefront of showcasing the rich tapestry of Latino flavors and traditions.

"I think the new trend is going towards niches of Latin food," Sanchez remarked. "We're seeing more and more the emergence of restaurants focusing on little pockets of food, specialized dishes, and unique culinary experiences. It's an exciting time for Latin cuisine." He is talking about Mexican food from a specific part of the country instead of the most common dishes or a place that only sells a kind of "anticuchos peruanos, or pupusas.".

"It is all about exploring the niches. I am very, very excited," he said.

Honoring women in food

Another trend he sees is the growth of Latinas as chef. "They are poping up everywhere, and it´s very exciting," Sánchez said. "The history of Latin food has been written by women's hands."

Sanchez's passion for empowering women in the culinary industry is evident on and off the screen. Raised by a single mother who pioneered Mexican cuisine in the US, Sanchez understands the importance of female representation in the kitchen.

"My mom Zarela Martínez is the pioneer of Mexican cuisine in the United States," Sanchez proudly stated. "I grew up in a restaurant, so I understand the challenges and triumphs of women in the culinary world. That's why I'm particularly hard on women to excel and succeed."

Sanchez's commitment to gender equality is reflected in his company, where women hold key leadership positions. He believes in providing equal opportunities and fostering a supportive environment for women to thrive in the culinary field.

In addition to his TV shows and restaurant transformations, Sanchez is dedicated to preserving the authenticity of Latin cuisine while incorporating innovative techniques and ingredients. Each episode of "El Toque de Aarón" delves into the kitchens of different Latino-owned restaurants, from Mexican seafood to Salvadoran pupusas. Sanchez and his team offer mentorship and guidance to optimize operations and meet the demands of discerning LA diners.

"We want to make sure that we have a lot of diversity in how Latino culture is represented," Sanchez explained. "We're showcasing a beautiful diaspora of what Latino food and culture truly encompass."
