Cloudwater Brewery makes new beer using yeast created by Manchester University lab

Manchester’s leading independent brewery Cloudwater has made a new beer using a yeast that has been specially created in the labs of Manchester University. The collaboration, a beer that will be called Tales From the Future, will be released at the end of the month.

It uses a novel strain of yeast in the brewing process that was made at the Manchester Institute of Biotechnology. Called Saccharomyces jurei, it was developed from a strain that was found in the foothills of the French Alps.

It differs from other brewing yeasts in that it is able to thrive and grow at lower temperatures, meaning that it will create different flavour profiles within the finished beer. It’s a 5% abv beer made in the ‘saison’ style - meaning it’s highly carbonated, dry and fruity - and has flavours of lemon and rose.

“It is brilliant to be able to work directly with Cloudwater Brew Co. to realise the potential of our new yeast species,” said the institute’s Professor Daniela Delneri. “Based on our work, S. jurei’s hybrids afford brewers more flexibility and options when brewing beers with different flavours and aromas. From here we can build on our work to create new yeast strains for different brewing needs.”

Cloudwater CEO Paul Jones added: “We are excited to be launching this beer following on from our work with The University of Manchester. This beer represents the possibilities of joining academia with industry and the importance of projects facilitated by this Knowledge Transfer Partnership. We cannot wait to share the fruits of our labour.”

It’ll be available to buy in 750ml bottles from both the Cloudwater website, and its taproom at the Piccadilly Trading Estate.
