Ambitious three-storey restaurant announced at iconic canalside location in Manchester

A new multi-level restaurant and bar concept will open in Manchester's Gay Village next year. Opening in spring 2023, Maya will be situated within 40 Chorlton Street - iconic location of Manchester's nightlife history.

The new dining concept will be situated in the same building as Leven, a design-led, NYC-style loft aparthotel, which opened on the corner of Chorlton Street and Canal Street towards the end of last year. Just this weekend, the stylish hotel was named in Britain's "100 Best Places to Stay" in 2023 by The Sunday Times.

Maya will take part of the ground and lower floors of 40 Chorlton Street, and will encompass a canal-side brasserie space serving modern-European classics and a lower-ground dining room that will centre around an ingredient-led, locally sourced and seasonal menu. The interiors across the spaces will merge the original industrial nature of the space with Art Deco details.

The restaurant concept is scheduled to open in the spring of 2023 and is being developed by a team of hospitality operators who have worked for brands in London including Soho House, Isabel Mayfair and Michelin-starred Petersham Nurseries. The kitchen team will be led by Mancunian chef Gabe Lea, who cut his teeth at Michelin-starred establishments like Le Manoir and The French at The Midland Hotel.

On the upcoming menus, Gabe Lee comments: " There is a lot of creativity going into the design and overall concept of the restaurant, and the menu development is no different. Our approach will be to champion the beauty and simplicity of exceptional produce and, where we can, we will focus on sourcing seasonal ingredients locally.

By having more than one dining space, we can run separate menus. The brasserie menu will be about long-standing favourites that we know people will love, alongside more creative and ingredient-led dishes in the dining room that will change regularly and react to what’s seasonal and available .”

Manchester brothers Joshua and Ben Senior are behind Leven - having invested millions of pounds to upgrade the building at its prominent location in the city's Gay Village. The building lay empty for some time before the hotel opened, but will be remembered by many as the influential Mash & Air bar and restaurant in the late 1990s.

The hotel is spread across four of the original warehouse floors and boasts exposed brickworks and large warehouse windows. A new fifth floor was built on top of the building as well, and houses spectacular penthouse suites with balconies and amazing views out across the city centre.

Once open, the new restaurant and bar within the same building as Leven will create over 100 new jobs in the region, with recruitment currently underway for front-of-house, bar and kitchen teams.
