A vegan pasta restaurant is set to open in Bristol city centre this week. Pastan confirmed its opening date on Facebook last night, giving just two days' notice to its followers and prospective customers.
The restaurant will open its doors for business tomorrow night (Tuesday, January 17) at 5pm. It will take up an empty unit on Prince Street that was formerly occupied by Friska before the coffee chain closed down.
The plant-based food brand, which specialises in vegan and plant-based pasta, has finally secured the all important alcohol licence it was waiting for before the opening date was set. Now the licence is secured, customers can look forward to enjoying some tasty vegan food like the 'smooth operator' - pumpkin and sage tortellini dressed in sage butter.

Pastan already runs two restaurants in London and Manchester, and has previously offered a pop-up in Bristol in the Gloucester Road area. Speaking in December, brand manager Sophie Weir said: “We noticed from the pop up we had that Bristol has an amazing vegan and plant based community and people are really open to trying new vegan options.”
Fans can enjoy their plant-based pasta everyday should they wish as the restaurant’s doors are open all week, with varying hours. It will serve lunch between 12pm and 2.30pm Tuesday, Wednesday, Thursday and Friday, with Saturday and Sunday’s service starting at 12pm, while Monday is evening service only.
