It took more than seven years for Singapore’s Capella Hotels & Resorts to breathe new life into one of Sydney’s most dignified buildings, a honey-hued Edwardian Baroque Revival landmark that once housed the city’s Departments of Education and Agriculture. Built in stages between 1915 and 1930, its very fabric speaks of dual purpose: enrichment and cultivation, knowledge and nurture.
Today, those contrasts are reimagined in a way that feels thoroughly modern — where historic cloisters meet a living wall of native greenery, where kinetic sculptures bloom above marble floors, and where a day might begin with an immersive spa ritual and end over Abrolhos Island scallops, coal-roasted Murray cod and a glass (or bottle) of Coonawarra Chardonnay.
