The clue’s in the name with this one: dark rum is, rather unsurprisingly, characterised by its dark colour and deep flavour.
It’s distilled from a source of sugarcane, and the best are aged for longer than some of their lighter counterparts in oak barrels. As with all rum, from white to gold and spiced, the spirit is enjoying something of a renaissance as discerning drinkers explore alternatives to gin and vodka.
According to research led by Paragon Brands, home of rums such as Pusser’s Blue Label British Navy Rum, Gen Z is the driving force behind the spirit’s increasing popularity with almost four in 10 (38 per cent) young adults drinking the tipple at least once a week. Meanwhile, Pinterest has seen searches for ‘rum cocktails’ increase by more than 15 per cent in the last six months.
Nicholas King DipWSET, spirits educator at WSET, the Wine & Spirit Education Trust, gives us the lowdown. “The main differentiation for dark rum is one of colour, but this on its own is not that helpful for people when they need to choose between two rums of the same colour,” he explains.
“Essentially, it comes down to how these rums are made. Most inexpensive dark rums are crafted using spirit that has either seen no ageing or has been aged for a very short period in oak. It’s then coloured using E150a to achieve the dark colour. Therefore, such spirits are typically simple and lack the aromas and textures of maturation.”
King continues: “Other rums that are more expensive but also have a dark colour will have achieved this through an extended period of oak maturation. This not only affects the price but also the complexity of the aromas (vanilla, coconut, clove) as well as textures (a thicker, richer mouthfeel).
The base spirit is typically more complex before it’s matured, too. This complexity in the base spirit is achieved by taking different approaches to fermentation and distillation.
However, notable differences exist between different distilleries and countries. For example, Foursquare in Barbados makes a very different style of long-aged dark rum to Appleton Estate in Jamaica. This is due to a variety of reasons that relate to choices made by the distillers throughout the production process.”
Of rum’s increasing popularity, Nicholas concludes: “A lot of time and effort has been invested by many people into promoting the diversity and exciting quality that exists among the sugarcane spirits of the Caribbean and beyond.
Across categories, consumers are turning to more premium products and are looking for brands that uphold provenance and transparency of production, instead of simple marketing gimmicks. Consumers are not helped by how rum is described or talked about, though. Colour is particularly unhelpful on all three points of the scale from white to amber and dark.”
