Tamil Nadu: National Research Centre for Banana transfers technology to make banana wine

TRICHY: ICAR – National Research Centre for Banana (NRCB) has licensed and transferred the technology to make banana wine and vinegar to Solapur-based Surachita Agro Producer Company limited in Maharashtra. The centre’s scientists said the technology transfer was aimed at enlarging the market for domestic wine producers.

Principal scientist P Suresh Kumar, the main inventor of the technology, said banana is a good choice for wine production due to its high concentration of polyphenols and antioxidants. Banana wine does not require additional sugar. K N Shiva, principal scientist and co-inventor of the technology, said banana wine can be produced by fermentation without adding alcohol or synthetic flavours. Similarly, in place of synthetic vinegar, banana fruit-based vinegar has good market potential.
