We now have an official dessert of the Queen’s Jubilee after the winner of the Platinum Pudding competition was crowned.
Jemma Melvin’s trifle dish consists of lemon curd Swiss roll on the bottom, St Clement’s jelly, lemon custard, amaretti biscuits, mandarin coulis, whipped cream, candied peel, chocolate shards and crushed amaretti biscuits.
It doesn’t sound very straightforward – or traditionally British. The prominence of amaretti gives the pudding a decidedly Italian twist.
However, a Swiss roll is more likely to have originated in Britain than being anything to do with Switzerland. Meanwhile, the citrus element is apparently a nod to the lemon posset the Queen had at her wedding.
While it sounds a little elaborate to assemble, Ms Melvin wants to see the pudding take off when the celebrations begin: “I’m hoping that everyone across the country is going to make this, I’ve made it really accessible.”
Maybe it’s the name of the pudding that doesn’t really lend itself to catching on in common parlance, and surely could have used a bit more workshopping. Royal Roll? Jubilee Jelly? Lemon Liz? Though that may just be a trifling matter.
