Popular Edinburgh food group open new authentic Greek restaurant in city centre

A new Greek restaurant has opened within Edinburgh's city centre, offering authentic Greek cuisine and a warm atmosphere.

Fava, on Morrison Street, has been bought and renovated by Mia Group, who already own a number of popular restaurant venues across the city.

With most of the food and ingredients being imported straight from Greece, Fava will offer locals something a little different to what they may be used to, seeking their opportunity to make the most of a possible gap in the market.

Mia Italian Kitchen on Dalry Road, Mia on Morningside Road, La Casa on Leith Walk and Le Bistrot are all part of the Mia Group family, with Area Manager Roberto Silvagni, looking forward to the company's expansion into one of the busiest parts of the city.

Fava launched their grand opening on Wednesday night and Roberto is hopeful that after a few weeks of people noticing the warm and tranquil atmosphere within the restaurant, it will carry the same popularity as the rest of his venues.

Speaking to Edinburgh Live, Roberto said: "I think a Greek restaurant is missing from this area, La Casa is a mixture of both Spanish and Greek. Here, it's a little more Greek, with salads, Gyros and other vegetarian options.

"I think it will be very popular because Edinburgh business is very good, the ambient is very nice and casual. There aren't many Greek restaurants in Edinburgh at the moment.

"We've taken a very good chef from Greece and brought him here to cook for us."

Roberto also said that Fava will source all the food they can from Greece.

He added: "We have a Greek supplier which is used throughout Glasgow and Edinburgh, Olive oil, wine and beer are all from Greece. With the pandemic and Brexit, it has been really difficult to source food from Greece and all the wine has been hard to ship, but we have a nice selection of red, white and rose.

"All the staff here are Greek, I'd say it's quite an authentic place.

When asked about a possible expansion outside Edinburgh and why he loves the city so much, Roberto said that his focus is purely on the capital for the time being.

He concluded: "When the pandemic hit, everything just cut off, so lets see what we can do. I love everything about Edinburgh, apart from the weather," he joked.

"Edinburgh is a great place to live and to work, filled with good people."

The interior of Fava took months to design and put in place as the previous owners of the building had left it in quite the mess.

The restaurant is now complete with aesthetically pleasing additions such as hanging plant baskets, a modern wooden furnished bar and floor and an wood-burning ornamental fireplace.
