A newly formed hospitality duo will open Parasol in Dalston next year, a cocktail bar inspired by Eighties New York mutant disco.
Parasol will serve “cutting edge cocktails” in an “atmospheric and inviting space”, said press fluff, with a changing roster of DJs playing “esoteric selections”.
The bar will take over the basement space formerly occupied by local nightclub The Nest and comes as a joint debut from experienced barmen Andy Kerr (Discount Suit Company and the Sun Tavern) and Tom Gibson (Ruby’s).
They said: “Since first meeting in Stoke Newington 12 years ago and working together on the Ruby’s cocktail concept, we’ve had the dream of working together on our own project, in our own neighbourhood.
“Now feels like the perfect time for us to launch Parasol, with Dalston’s nightlife and culture seeing a great resurgence, which we’re both tremendously excited about.”
Operating under the title The Umbrella Project, on the way will be cocktails, both classic and house, a lively wine list, and a bar snack menu provided by Provisions Wine & Cheese, an upmarket grocery that started out in lockdown.
Pleasingly, Parasol will be open Wednesday to Saturday until 2am.
