New kitchen brings new menus at Côte By Mauro Colagreco

It would only seem fitting that reopening after a month-long kitchen renovation, Côte By Mauro Colagreco would also introduce a new menu.

In addition to the spruced-up Show Kitchen, Côte has a new Library service. Engagements with the kitchen take centrestage at this kitchen. Diners can interact with Executive chef Davide Garavaglia and his team while they showcase their culinary skills in the open. 

The sleek, dark wood-panelled lounge will be the scene of the new Buchées menu (B2,500++) where diners enjoy tipples and refreshments. Chef Garavaglia’s Buchées menu, comprises five creative savoury bites and five sweet snacks that celebrate seasonal ingredients, served with a three-glass wine pairing. 

But, that’s not the only new menu. Chef Garavaglia also has new dishes on the five-course “Inspiration” menu (B4,100++), the seven-course “Experience” menu (B5,800++) and the nine-course “Carte Blanche” (B6,500++) menu. During weekdays, the restaurant also offers a four-course “Escapade” lunch (B2,250++).

“I am thrilled about this new chapter for Côte,” says chef Garavaglia. “I have cooked up lots of new ideas throughout my time at the restaurant and the enhanced kitchen allows me and the team to reach our full potential and deliver a truly exceptional dining experience."

The nine-course Carte Blanche begins as always with delightful little bites. But let me get into the stars of the menu. A traditional vegetable soup, much like a summer minestrone, is served in a courgette or zucchini with beans, razor clams, basil and grilled courgette consommé.

Yellow and green courgettes also feature in another dish along with poached John Dory, vongole, bouillabaisse, saffron clam foam and a sprinkling of espelette chilli powder. A very Mediterranean dish!

A non alcoholic pairing  of five glasses is available for B1,500++ and seven for B1,900++. Wine pairings are also available for each course. The cheese platter is priced at B750++ for a choice of three, from a wide selection.
