A Michelin star chef has officially opened a new-look Nottinghamshire pub after taking over as executive chef. London-based Michael Carr will bring 15 years of culinary experience to The Reindeer in Main Street, Hoveringham.
The former Fenchurch head chef has worked at some of London and Yorkshire’s best Michelin-starred restaurants and has starred on BBC2 competition Great British Menu. Partnered with Nottinghamshire businessman Sean Reddington, the pair now have two pubs open - The Old Vol, in Caythorpe, and now The Reindeer.

Mr Carr said: “My main reason for joining these two fantastic establishments is Sean. I wanted to be part of the big picture and building this operation up together really gets my creative juices flowing, especially with all the current talent we have in the business. It’s such an exciting change to be a part of, and a new challenge for me while I get accustomed to Nottingham soil! I cannot wait to get stuck in."
Sean was recently a finalist for this year’s Great British Entrepreneur Awards. He took over and revamped The Old Vol in December 2021, and since hiring an award-winning team of chefs, the gastropub has been greeted with critical acclaim from food critics and awarded the coveted AA Rosette award.
Mr Reddington says: "This is a fantastic opportunity to bring one of the country’s best chefs to Nottingham and inject innovation and daring into its culinary scene. With The Old Vol’s gastro-fusion menu, The Reindeer’s pub classics and plans for a fine dining experience in the city centre soon, our vision is to offer somewhere to eat for every occasion, with the finest food and incredible service as standard.”
Sharing kitchen talent from The Old Vol, staff at The Reindeer will be made up of existing employees who will work across both sites, creating a team of 45 members of staff across the two venues.
Sean and Michael will also be opening a third location in the county which will be a fine-dining restaurant, proposed for Nottingham’s city centre in the new year.
