Menu for Trump-Xi state dinner announced featuring nod to historic ‘Toast to Peace’

• The White House has announced the menu for President Donald Trump ’s formal state dinner with Chinese President Xi Jinping which will be attended by the official delegations as well as business leaders and government officials.
• Preparations for the dinner were led by first lady Melania Trump and the menu fuses American ingredients with subtle Chinese culinary influence. The meal will start witha toast of Schramsberg Blanc De Noir sparkling wine, honoring the historic “Toast to Peace” shared by President Nixon and Premier Zhou Enlai in Beijing in 1972.
• The first course of the state dinner features a sweet yellow squash velouté complemented by an earthy wild mushroom fricassée, crispy smoky pancetta, and a finishing drizzle of scallion oil, the White House said.
• For the second course, seabass with a fragrant toasted sesame crust is served alongside braised baby bok choy, roasted garden eggplant, and an acidic fresh herb sauce verte.
• The final course is a fruit-shaped dessert composed of a smooth vanilla crémeux with a sour cherry confit center over a walnut frangipane, served with ice cream made using White House honey.
