Refurbishment of a former Chinese eatery is underway to create an upmarket fried chicken restaurant. Michelin-starred chef Alex Bond is behind the new venture called Mollis.
Work is underway at the Derby Road site, conveniently located next to his fine dining restaurant Alchemilla, which serves tasting menus for discerning diners. As the plans begin to take shape proposals have been submitted to Nottingham City Council for changes to the building, which lies within Canning Circus Conservation Area.
The property was previously One More, a Chinese restaurant, which was formed using basement level space fronting Derby Road at street level. The application outlines plans to keep the existing building in its current state with internal partition wall alterations.
