I consider the number of garlic cloves in the ingredient list of a recipe to be more of a jumping off point. Unless I’m testing a recipe, in which case I follow the recipe as written, I almost always add more. Count me among the garlic fiends.
The sharp, peppery bite it delivers is sublime. Minced and dropped into butter or oil, it delivers a heavenly aroma. And, because it lasts so long, I almost always have it handy to drop into weeknight dinners. If you are nodding in agreement, I am betting you will love this quick, thrifty chicken and rice dish. It is one I’ve been making since I was in college, especially if I found garlic and chicken on sale.
