The mum-of-three was told the cancer had spread to her lungs and liver in February 2021, but she sought alternative treatments and did "everything conceivably possible" to fight the disease.
However, in August 2021 Jennie's health started to deteriorate and the mum of three sadly died in November last year surrounded by her family.
Now, Jennie's family hopes a song the 35-year-old wrote before she died will hit the charts.
Describing his daughter, Dad Tony Walsh, 55, said Jennie was an "incredible person", whose children were her life.
Speaking to the ECHO, Tony said: "Jennie was an extraordinary person, she was fun-loving , fantastic mum, her whole world revolved around her three kids.
"Everything about her was fun, she always sang as a child, sang at theatres schools and that kind of thing.
"She always wanted to sing, everything was about singing for Jennie and having fun with the kids."
Tony added: "Jennie was just an incredible person, she would send the kids funny videos every day.
"She was just bonkers and I have four kids and eight grandkids, there's always one nutter in the family and it was Jennie."
Tony said Jennie fought hard against her illness for as long as she could and tried to find alternative treatments to fight the cancer.
The 55-year-old added Jennie's three children are "doing incredibly well" and have continued to "thrive" with their schoolwork and activities.
Jennie was a singer and had recorded a number of songs, including one which reached number six in the country charts.
Before Jennie died, the 35-year-old recorded a song called Keep Rollin' On which has now been produced which will be released on music streaming services, including Spotify, Apple Music, deezer and Tidal on Monday February 28.
