London’s most famous bagel shop is to get into the pizza game next month with a pop-up at the Hoxton hotel in Shoreditch.
Every Sunday, as part of a new pizza party series, collaborators will arrive at the Hoxton to take the reins for two weeks to serve a duo of pizzas topped with their own ingredients.
Kicking off is Brick Lane stalwart Beigel Bake. On August 4, pizzas will be made with salt beef, homemade pickles and mustard on a base of tomato, mozzarella and chilli oil. On the 11th, classic margheritas, but with dough flavoured with seeds usually found in bagels.
Following Beigel Bake is new kid on the block Auld Hag, the Scottish bakery that has been prompting daily queues thanks to its morning rolls, beef mince sandwiches and Scotch pies.
Such Scottish delicacies will arrive on August 18 and 25. First will be the “offaly meaty”, featuring beef and lamb haggis, whisky-oak smoked ‘nduja, Highland crowdie and scotch bonnet jam.
For the veggies, another called the “smoke-a-leekie”, a white-base pizza combining crispy tatties, Edinburgh butter leeks, curly parsley and a smoked garlic sauce from Orkney.
Pizza dough will be made with Wildfarmed flour and available between 12-5pm each Sunday. Further residencies will follow Beigel Bake and Auld Hag. Prices between £12-15 for an 11 inch pie.
