An aubergine is not usually the sort of vegetable that makes people reach for a measuring tape. Most end up sliced into curries, roasted in the oven or left to soften in a pan. For Pennsylvania gardener Erik Gunstrom, however, growing them has become something of a competition. After briefly holding the record for the world's heaviest aubergine in 2025, he watched that title disappear only weeks later when another grower produced a much heavier specimen. The experience did little to discourage him, instead pushing him to look for another record that might prove harder for rivals to take away.
