This soup reflects the bounty of the rivers. It warms you up on a rainy Seattle day. Furthermore, it feels healthy yet indulgent. It connects the people to the water.

Creole Gumbo

Louisiana has a flavor all its own. Gumbo is a stew that starts with a dark roux. This step creates a deep, nutty flavor base. Effectively, it creates a melting pot of ingredients. Okra, sausage, and seafood swim together. Traditionally, it is served over rice. It takes hours to make properly. Just one bite tells the story of New Orleans.
