These top chefs will be creating their own menus inspired by Lind and Lime gin, and the whole event will be hosted at their new working distillery in the heart of Leith. The menus feature a wide variety of cooking styles, from poached oysters to Tortellini and Gigha Halibut.
The event starts on August 1, and each of the featured restaurants will host the pop-up Supper Club for one day each week with their own tailored menu. The Supper Club will be hosted every Monday in August for just one night per restaurant.
Ian Stirling, Co-founder of Lind & Lime Gin said: “Throughout the festival season, we’re looking forward to adding something a little bit different to the Leith dining scene with our pop-up Summer Supper Club series in collaboration with Eórna, Buck & Birch, Leftfield, Æmilia and Heron.
“Each pop-up will be offering something totally different. From Monday 1 August, we’ll have the Pasta makers Æmilia creating Lind & Lime Gin & Tonic Baba and Leith Shore based Heron cooking up a Lind & Lime Cured Mackerel with each chef adding their distinctive flair.”
