Crews remain at the scene today, and roads surrounding the venue remain closed by police, as investigation work takes place.
The fire and rescue service said they were called to a fire involving the boiler room which was put out before fire crews arrived.
However after further inspection, crews found that the fire had spread to the roof space.
Merseyside Fire and Rescue service has confirmed that it is not yet known how the fire started.
A spokesperson for the service said an investigation into the cause of the fire is underway.
They added: "Our crews remain on scene at this three storey premises at Thornton Hough, Wirral, however, our resources have been scaled back significantly from yesterday’s firefighting activities.
"From 6pm on Sunday evening six fire engines began providing rolling relief cover every 30 minutes.
"One aerial appliance was in use for the removal of roof tiles, and provided further survey of the roof line, while one hose reel jet was being utilised on the ground floor.
"Our operational drone capability was deployed with thermal imaging to monitor temperatures of areas affected by fire and provide an additional overview.
"Crews continued to monitor conditions and ambient temperatures overnight using the aerial appliance and thermal imaging camera.
"Temperatures have decreased through the night and crews are damping down affected areas with a high pressure hose reel as monitoring continues with no increase to temperatures or fire spread.
"An investigation into the cause of the fire is underway."
