He's the Welsh chef who had already wowed visitors to his Aberystwyth restaurant and then impressed judges and guests alike with his performance throughout the BBC's Great British Menu 2022. And to cap off what was an amazing ascent to foodie fame, Nathan Davies achieved not one but two Michelin accolades in the renowned 2022 guide.
And now Nathan has unveiled a new project that will let everyone try their hand at cooking his dishes which have caused such a storm. The 31-year-old Welsh chef, who was brought up in Ceredigion - read our chat with him earlier this year - doesn't seem like he's planning on slowing down any time soon.
Having previously been the sous-chef at the multi-award winning Ynyshir, which this year was voted for as the UK's best restaurant and you can read about here, has gone from strength to strength. He opened SY23 in Aberystwyth town centre in 2019 and had already built up a strong local following but 2022 was definitely his year. Read our review of his restaurant here.

He rose to foodie fame after appearing on and reaching the final of the BBC Two show Great British Menu in March, which won him a place serving his Merlin-inspired lamb starter at the banquet celebrating a 100 years of British broadcasting after wowing judges with his fish dish. Then, in April, he was shortlisted as the 'chef to watch' at this year's National Restaurant Awards.
Writing on Instagram, Nathan wrote: "So quick recap on what’s been going on over the last couple of months! Cooked at @pubinthepark with @shropshire.lad also went on a fishing trip with him, became a brand ambassador for @lafont_hospitality_uk received our @michelinguide star and started writing a cook book. A few other bits and bobs too but that’s the jist of it!"
Fans were quick to react to this news with one exclaiming: "I need that cook book", while another wrote: "Really looking forward to the book, Nathan!" A release date for the book has not yet been announced.
