A carton of eggs can be one of the most useful groceries in the refrigerator, but one common storage mistake can turn a dozen perfectly good eggs into a food-safety concern. In the United States, eggs are sold refrigerated and are expected to remain refrigerated after purchase. USDA guidance says refrigerated eggs should not be left at room temperature for more than two hours, or more than one hour when temperatures reach 90°F or higher. That makes the trip home from the grocery store and the way you handle the carton afterward more important than some shoppers realize. The good news is that avoiding the problem is simple once you understand why temperature changes matter.
