A new restaurant opening in Broadway Market is set to arrive late November courtesy of hospitality power couple Honey Spencer and Charlie Sims.
Called Sune – a word derived from the old Nordic word for son, as well as the name of Spencer’s mentor Sune Rosforth in Copenhagen – the restaurant is set to open on the canal side of the bustling Broadway Market, and will open for lunch and supper, as well as a weekend brunch service. It will seat 36 in the main restaurant, with an additional 20 on the terrace.
Whilst the full menu is yet to be revealed, early dishes include Galician sea urchin and preserved tomato, smoked eel Caesar salad, and za’atar spiced lamb ribs with honey and salted yoghurt. To head the kitchen, Spencer and Sims have called on chef Michael Robins, most recently of the Midland Grand, Acme Fire Cult and Akoko.
Spencer will head the wine program and thanks to her extensive network of suppliers, vignerons and growers, the list is set to champion the best seasonal natural wines around, served alongside more familiar and sought-after bottles.
Speaking to the Standard, Spencer said: “Feeding and watering people is in our DNA. We’re over the moon to be adding to east London’s hospitality landscape and offering our own spin on the art of the restaurant.“In recent years, so much emphasis has been put on who’s cooking in the kitchen, and while, of course, quality food is hugely important, its focus often leaves a restaurant’s hospitality overlooked. Our service will always be thoughtful and warm, leaving our guests feeling nourished and truly at home.”
Sims said of the upcoming opening, “I've loved restaurants and particularly neighbourhood restaurants for as long as I can remember. The most fundamental quality of a neighbourhood restaurant is that it’s somewhere you want to always go back to and feel like it’s yours. We’re looking forward to welcoming guests with dishes that are striking and beautiful on the eye, but more importantly, comforting, delicious and deeply satisfying to eat.”
Between them, Sims and Spencer have amassed 35-years of experience at some of the Europe’s most influential restaurants.
Sims’ CV includes time spent at noma Copenhagen as restaurant manager, as well as stints at London’s Michelin-starred Lyle’s, while Spencer’s distinguished career as a sommelier saw her go from bartender at Jamie Oliver’s Fifteen to wine director at the Studio Paskin, the group behind London favourites The Palomar, Evelyn’s Table, The Barbary and The Blue Posts.
