A SPEYSIDE distillery has unveiled the first Scotch matured in rare Mongolian virgin oak to be bottled for global release.
The GlenAllachie Distillery has launched the fourth edition of its Sinteis Series, a 10-year-old single malt Scotch whisky matured through a combination of bourbon, Pedro Ximénez and Oloroso sherry casks before being transferred into casks made from Mongolian virgin oak.
The limited-edition Sinteis Part IV is a 2015 whisky bottled at cask strength of 58.5% alcohol by volume, with its natural colour and without chill filtration.
The release is built around the theme “A Convergence of Three: Three Casks, Three Stories, One Exceptional Whisky”.
Unlike earlier Sinteis editions, which focused on combining whisky matured in two different cask types, Part IV was first matured in bourbon barrels before being divided between Pedro Ximénez and Oloroso sherry casks. Those whiskies were then brought together and transferred into rare Mongolian virgin oak casks for further maturation.
The distillery said the process reflects its continuing experimentation with wood and its "pursuit of new ways to influence the character of single malt Scotch".
Mongolian virgin oak comes from Quercus mongolica, a species known for its dense, tight-grained structure. The wood is difficult to source and is rarely used in whisky maturation. Trees must grow for more than a century and be naturally felled before the timber can be used commercially.
According to GlenAllachie, the oak brings notes of rich caramel, sandalwood and oriental incense to the whisky.
The Oloroso casks contribute dried fruit, dark chocolate and nutty flavours, while the Pedro Ximénez casks add sweetness, toffee and treacle.
The finished whisky is described as showing dark chocolate, orchard fruits and warm pastry, with additional tasting notes including fig jam, cocoa, cinnamon, candied ginger and vanilla.
Master distiller Billy Walker said the new release represented “a challenge and an adventure” for the distillery, given the rarity and “unforgiving nature” of Mongolian oak.
“We had little precedent to work from,” Walker said.
“As a team, we trusted in our instinct and experience, and I’m exceptionally proud of the whisky we’ve created.”
The bottle is presented in packaging featuring a hand-drawn motif inspired by Quercus mongolica. The design is framed by an endless knot, reflecting geometric patterns found in traditional East Asian art and the relationship between wood, whisky and time.
Gold foil highlights the design, which the distillery says is intended to represent the balance between natural materials and the precision of whisky-making.
Sinteis Part IV continues GlenAllachie’s focus on experimental cask maturation while claiming a first for Scotch: a Mongolian virgin oak-matured whisky released to drinkers around the world.
It is available from the distillery and online in the UK, with a recommended retail price of £75.99, ahead of a global rollout in the coming weeks.
