Scottish pickle business supplies 400 shops and targets £500,000 in 2026 sales

Some businesses begin with a detailed business plan. Goat Rodeo Goods began with surplus vegetables and an idea for turning them into something customers would want to buy. Business partners Lucy Patto Davidson and Kat Goldin began experimenting with surplus produce in 2023, eventually turning it into a pickle business. Their first batch sold out at a Christmas market, encouraging them to develop more products. A year later, an accidental order for 2,000 kilograms of cucumbers, rather than the 200 kilograms they intended to buy, forced them to scale up production. The pair spent 2 weeks making pickles before the cucumbers spoiled, expecting the jars to last them a year. Instead, the batch sold out within weeks. Goat Rodeo Goods officially launched in August 2024. By March 2026, the Scottish business had reached 400 UK stockists, including Dobbies and Oliver Bonas, and was expected to generate more than £500,000 in sales during 2026, according to The Courier.
