A restaurant in Bristol has been named in the Michelin Guide after first opening less than a year ago. Little Hollows Pasta was named among restaurants in London, York and Dumfries on Wednesday (September 21) as new additions to the guide highlighting the world's best independent restaurants.
Owner and chef, Chris Davies, said the announcement was a surprise for him and the whole team on Wednesday morning. He first found out about the news while scrolling through Facebook when the Michelin Guide first announced the new restaurants.
"It was a real surprise," Mr Davies told BristolLive. "I think it's just really great for everyone here who works so hard. It's really nice to be listed among all those amazing restaurants in Bristol.

"We're coming up to our first birthday on Sunday (September 25) so it's an amazing achievement to be listed there in just under a year of opening. We're really happy."
Little Hollows Pasta of Chandos Road first opened in October 2021 offering fresh pasta made daily on-site. BristolLive previously described the pasta as "perfect", almost completely mastering a strong, Italian-inspired menu just a few weeks after opening.
The neighbourhood restaurant is now one of 16 sites based in Bristol that feature on the coveted guide. They join Marmo, Adelina Yard, littlefrench, Root and Wilsons among others.
Mr Davis added: "Our aim was never to get into the Michelin Guide, it's never even been on my radar. It's really great news and it's great for the team as it has been a hard year for everyone, and everyone in the industry.
"Everyone here has been working really, really hard especially in the last couple of months so it's a nice way to end our first year."
In its description of the restaurant, the Michelin Guide said: "This lovely little bistro-cum-deli is named after the first pasta shape chef-owner Chris learned to make many years ago; glance in the window as you enter, and you’ll see the handmade pasta hung out to dry.
"The best idea is to ignore the menu and just go with the team’s suggestions: you can’t go wrong with any one of the honest Italian dishes, which are authentic, fresh and full of flavour. Make sure you try one of the classic desserts – and don’t forget to grab something from the deli to take home with you!"
Little Hollows Pasta will be marking their first birthday at the Chandos Road Festival, which they are attending for the first time this year. The festival - which returns after a two-year hiatus - is on Sunday, September 25 from 12pm to 6pm with performance stages, street entertainers, market stalls and delicious offerings from the businesses along the road.
