As former barista and co-founder of Home Coffee Expert, Matt Woodburn-Simmonds, explains, 'WDT tools break up clumps of grounds that form while finely grinding coffee beans. This is especially common when you use grinders with burrs smaller than 60mm, which comprises most coffee grinders for at-home use.

'These clumps create uneven grounds distribution in your coffee puck and can result in channelling, water going straight through a narrow gap in your grounds rather than filtering through the coffee bed, or just uneven extraction. Both of which can ruin the flavor of your espresso.'

A high-quality WDT (Weiss Distribution Tool), with the correct balance of gauge, configuration, and depth, can distribute ultra-fine grinds more evenly. Using a WDT tool can break up clumps and create a nice and even distribution of grounds before tamping and using with your best coffee maker.

'This more uniform coffee puck forces the water to travel through all your coffee grounds in a nice and even manner, meaning more consistent and better balanced flavor extraction,' Matt explains.

Two things make for a good needle tool:

  • Needle gauge: 0.25–0.3 mm needles slip between particles without creating their own micro-channels; thicker needles, 0.4 mm and above, are more durable but push grounds around. Thin needles stirred through the full depth of the grounds break the clumps, collapse the voids, and redistribute particles evenly.
  • Needle count: Five to seven needles is ideal for most users, offering great distribution, but you can upgrade to eight or nine needles for higher coverage on larger brews, or for a more professional tool.
