A woman who is looking to lead a healthier lifestyle after the excesses of the festive period has left foodies salivating with her tempting "fakeaway" recipes. Jordan Wilcock, 24, regularly shares her go-to recipes on social media, showing that you enjoy all the flavours of your favourite takeaways while sticking to a budget.
One particular favourite of Jordan's is her simple yet "delicious" chicken tikka kebabs. The dish costs just £2 for two portions, and she and her partner believe it to be even "better" than the classic takeaway version.
The digital marketing executive has now shared her healthy yet satisfying recipe, which has gone down a treat with her TikTok followers.
Jordan, from Barnsley, said: "It tastes like such a treat, but still so healthy and easy to make. I get all of my ingredients from Aldi and on average, I'd say the dish costs around £2. I make it regularly and it's always absolutely delicious."
Chicken tikka kebabs recipe
£2 for two portions, 573 calories per person.
Ingredients for the tikka kebabs:
- two chicken breasts
- 3 tbsp Greek yoghurt
- juice from one lemon
- 1 tsp of the following ingredients: garam masala, paprika, cumin, salt, dried or fresh coriander, turmeric, curry powder, minced garlic and ginger
- 1tsp red food colouring (optional)
Ingredients for the garlic naan:
- 70g self-raising flour
- 80g Greek yoghurt, 2 tsp butter
- 1tsp minced garlic
- 1tsp dried coriander
- 1tbsp olive oil
Cooking method
First of all, combine the marinade ingredients with the chicken and leave this to sit in the fridge for at least one hour, and ideally overnight if possible. Once marinated, the chicken should be cooked in the air fryer at 200 degrees for 20 minutes and turned over occasionally.
While waiting for the chicken to cook, you should start making your homemade naan bread by combining Greek yoghurt with self-raising flour.
Once combined, you should knead the dough for a couple of minutes before separating into two balls which can then be rolled into your desired shape. Extra flour can be used to mould these if the texture ends up being quite sticky.
You should then combine the butter, garlic and coriander to make your garlic butter, before frying the naan bread on high heat using 1 tbsp of olive oil, keeping a close eye on it.
When both sides of the naan have bubbled, spread the garlic butter over it, before tossing it on both sides for a couple of seconds.
It's then time to serve your dish with fresh cucumber and red onion salad dressed with lemon juice and coriander. The perfect Friday night treat.
