Former P.Franco, Bright and Peg head chef Will Gleave is teaming up with Ben Chapman, co-founder of Brat, Kiln, and Mountain, to launch a new dinner series.
Loose Joints will begin on Tuesday October 3, with the series hosted at Climpson’s Arch, Hackney, the sister site to Michelin-starred Brat.
Press material said: “Loose Joints will merge [Gleave’s] stripped-back, just two induction hobs approach, which became an icon of the London restaurant scene at P. Franco, with the charcoal taos wok cooking Chapman brought to Kiln.”
Currently marked to be a four-part series, running throughout October on consecutive Tuesday evenings, Loose Joints was named after the avant garde disco records of the 1970s underground New York dance scene.
Weekly menus will be created alongside Kiln head chef Meedu Saad, and SongSoo Kim, development chef at Super 8, which operates the Soho restaurant alongside Brat, Mountain, and Climpson’s Arch.
Menus, an announcement said, will be the “result of complete freedom of concept, bound with the collective knowledge in specific cuisines and produce the group share.”
Dishes at the first dinner will include a spicy tartine of cured mackerel, yaki-shimo style mullet, a white curry of braised Jersey beef, and hot and sour mussels.
Gleave will also revisit some of his dishes from his days at P.Franco, including his much-Instagrammed XO squid noodles, while Climpson’s head of wine Beth Robinson will be in charge of pairings.
Gleave said: “Loose Joints will be a home for all the ideas we would love to do but can’t work in the very busy kitchens we work in. A chef’s dream menu, without constraint on concept and served around a sharing table of like-minded people drinking like-minded wines.
“Cooking with Ben, SongSoo and Meedu and with the knowledge of specific cuisines and produce they bring is always wonderful and something I find inspiring in the way they work together”.
