Former Michelin star chef Josh Eggleton and his sister, Holly, have announced plans for the opening of the Pony & Trap. The duo have also launched a one-month Kickstarter crowdfund to help complete their vision for the new produce-led restaurant, event venue, cookery school and kitchen garden.
Renamed the Pony Chew Valley, the Kickstarter crowdfunder will offer guests an exclusive chance to dine first at the venue, host a private event at the new restaurant or enjoy a host of other experiences.
With a £100,000 target, the funds will help to complete the build of the new venue spaces, with further rewards also including private dining experiences from award-winning Bristol chefs including Root’s Rob Howell and Bianchis Group’s Ben Harvey. Other rewards include the chance to have The Pony Chew Valley team cooking for you at home, exclusive Christmas and Boxing Day hampers, exclusive early-access to Pony Cookery School classes and limited edition artwork by Bristol street artist Inkie.

Josh Eggleton says: “The Pony Chew Valley has undergone a complete physical transformation and this is the final stretch before we reopen with a brand new vision for our original space. We are looking to create food experiences that bring people together in a place to inspire joy, family connection and collaboration.
“Every element of the menus will be grown locally or have a provenance which is traceable, putting food education and sustainability at the heart of the experience. We will be opening the restaurant and gardens Wednesday to Friday for guests to enjoy a menu that reflects the land and waters that surrounds the Pony Chew Valley.
“We will also present special events throughout the month such as a fish and shellfish dinner, a steak night, or a Sunday roast. All of which invites you to experience dishes down to ingredient level.”

Josh, a former contestant on TV show Great British Menu, has revealed that restaurant dining, weddings and event hire will return in September this year, with the cookery school opening later into the autumn/winter.
Bookings will be available via www.theponychewvalley.co.uk from August. Early access to bookings can be made through the Kickstarter crowdfunder.
