Inside Dean Banks' new Edinburgh restaurant as it officially opens

Dean Banks' highly anticipated new food and drink destination is now open and has welcomed in its first customers.

A beautiful restaurant and wine bar set across two floors, Dulse is serving up sensational seafood on Queensferry Street.

The bar, which offers high end cocktails, wines and delicious-looking small plates based around Dean’s love of Scottish produce, as well as his own premium drinks brands Mond Vodka and Lunun Gin as house spirits, opened earlier this month.

And now the upstairs restaurant has launched too, serving up fresh Scottish seafood in stunning, cosy surroundings – so whether you relax in the downstairs bar with a bite, or upstairs in the restaurant, the mood and the premium quality remain the same.

Dean said: “I’m so happy Dulse is now fully open and it’s exactly as I planned – I love it.

“It’s the perfect neighbourhood restaurant you want to drop in for a drink, a few bites, and end up spending a long afternoon or evening with friends old and new enjoying stellar food and drinks.

“It’s relaxed, it’s small plates, it’s exquisite seafood and the stunning produce I want to make our lovely country famous for.

“My spirits brands Mond Vodka and Lunun Gin are front and centre for cocktails, as are our sustainability policies, so look out for lots of recycled food items – like using peels to make syrups and things.

“There is so much we can do in the trade and I am determined to lead the way whenever possible, for my own children and for everyone’s children.”

Located in the premises formerly occupied by Edinburgh icon L’Escargot Blanc, Dulse proudly has sustainability at its heart when it comes to the actual building, with the team keeping remodelling to a minimum and essentially recycling and upcycling the space itself.

And while Dean’s other Edinburgh restaurant The Pompadour within the Waldorf Astoria is very much about fine dining, Dulse is at the other end of the scale – think laid-back mood, no dress code, a relaxed vibe and very reasonable pricing.

“It’s a place to kick back and enjoy the very best of Scottish seafood with the ingredients presented to showcase them at their beautiful natural best – there’s no more than three ingredients on a plate.

“This is just the kind of place I love – turn up as you are, relax and spoil yourself. You’re basically coming to my house for a drink and some food. Welcome and enjoy.”
