Singleton offers limited cocktail pairings at Greyhound Café and Another Hound Café that highlight light and refreshing recipes for after-work winding down.
Until May 6, the Scottish whisky label has launched a global "Love Pairing" campaign, partnering with local restaurants to find a perfect match for their single-malt scotch whiskies. Even without accompaniment, the brand's decadent spirits can stand alone and be enjoyed neat or on the rocks. However, in a new twist on whisky drinking, the brand is shaking things up by offering their scotch whiskies as easy-to-drink cocktails, expertly paired with Thai-twisted dishes selected from Greyhound Café's menu
Designed for at-home mixology, five concoctions are priced at B300 each and simply crafted with Singleton's signature "Plus Two" trick. What is up their sleeves are just one fizzy drink and one juice for each whisky-based recipe.
Tom yum calamari (B230) and Tropical (lemonade and passionfruit juice) make a flavourful starter couple for B450. Golden deep-fried squid with tom yum seasoning are pleasurably chewy till the last bite, with the savour and sweet sip from the drink complementing the dish. Pro tip: scoop down the flesh of fresh passion fruit that garnishes the cocktail for an extra sour tang and crunch.
On the menu are two salmon salad pairings guaranteed to turn up the heat. The Supreme spicy salmon salad (B350) is served in Thai yum style with pomelo and slices of Norwegian salmon, and comes with fermented fish sauce as an optional addition. You can order it as a pair with its counterpart, Orchard (tonic water and apple pear juice), for B550. Thai Salmon salad (B300) is a less fiery option with Japanese spicy sesame dressing. The salad is sprinkled with chopped lemongrass, shallots and mint leaves for aromatic touches. The dish comes with Riverside (lemonade and chamomile tea) and will set you back B520.
Cola-braised chicken (B230) and Snug (lime juice and cola) make a delicious pairing, priced at B450. To balance out the sweet and savoury flavour of the dish, don't forget to ask for a bowl of rice to enjoy with it.
If you're a fan of Greyhound Café and Another Hound Café, you know that their pasta menu is a must. For only B520, you can enjoy Vod de spaghetti (B350) and a fruity cocktail Breeze (tonic and cranberry juice). Expect a creamy spaghetti Pomodoro and salmon, with ebiko on top. The secret ingredient in this dish is dill, which adds an irresistible herby aroma. Before being served, it's flambéed with bourbon for an extra touch of flavour.
For those wondering why more than half of the pairings on the menu feature salmon dishes, it's because they pay homage to Singleton's logo, which depicts the salmon that swim and spawn in the River Fiddich, near the brand's distillery.
