Epic toasties and smooth hot chocolate now being served out of Coolock school bus

Hidden inside the Malahide Road Industrial Park in Coolock is a secret that is worth discovering, returning to, and telling your friends about.

When driving into the estate, you may be surprised to come across an American school bus parked up every day.

But what is even more surprising is the grub that you can get here.

Today We Are Making opened just five weeks ago, and has been a roaring success ever since.

Much of that would be down to TikTok and other social media platforms - after all, what social media savvy wouldn't be gagging to grab snaps of this spot?

But regardless of how it looks, this food truck should should be on the bucket list of any self proclaimed Dublin foodie.

With a focus on great quality over showmanship, you can be guaranteed that what you taste will match or even soar beyond your expectations.

Speaking to the business' founder Stuart Burke, we found out how the food truck, or should we say bus, came to be.

Stuart revealed: "Today We Are Making started as a way to keep my daughter entertained and engaged in the first lockdown. We decided we would make some cooking videos on TikTok without any clue about what we were doing or any plan.

"It very quickly took off."

Today We Are Making is proud to serve simple yet delicious sandwiches and hot chocolates.

The Classic Grilled Cheese, AKA The Freshman, does what it says on the tin and it does it extremely well.

Oozing with Irish Cheddar and Italian Mozzarella, it is a gloriously gooey affair that is sure to leave you satisfied, complimented by your choice of dip.

There is also The A+ Student (ham and cheese), which sees two slices of "the finest" fresh sourdough encasing Stuart's very own secret recipe featuring honey and chilli glazed ham and a mix of cheddar and mozzarella.

The other sandwiches on the menu are The Graduate (crispy chicken tenders, Frank's Buffalo Hot Sauce, classic Irish cheddar and Italian mozzarella) and The Headmaster (beer-braised brisket, caramelised sweet onions, classic Irish cheddar and Italian mozzarella).

Another selling point that Stuart is particularly proud of is the hot chocolate.

He said: "Our signature hot chocolate is the stuff of your dreams. We take real chocolate, shred it into small pieces and put it into the jug with the milk, so it becomes silky and luxurious.

"The feedback to the hot chocolate is absolutely unreal."
