Edinburgh Steam Bunny: New steamed bun and street food stall opens in Leith

A new Edinburgh street food venue has opened in Leith serving steamed buns.

Steam Bunny opened in the capital on May 9 and sells a variety of steamed buns from a food trailer in Leith.

The business was started by friends Tomasz and Maciej, who got the idea just before the first Covid lockdown. The pair bought a trailer early in 2021 and completely renovated it while waiting for various permissions and certifications to come through.

Having opened recently, they’re now serving a selection of Euro-Asian style steamed buns with a variety of different fillings- from pulled pork and cumin to Cauliflower, coconut and turmeric.

They are also working to try and produce as little waste as possible. Making a small garden from recycled items and pallets, to using steam and hot water for their cooking to minimise waste energy. They also purchase their meat from a local, four generation family run butcher- John Henderson's.

In the future, they plan to open their business to support local artists in Edinburgh, giving them a venue to exhibit their work but, for now, they are going to focus on getting their food to Leith locals.

Tomasz, who has lived in Edinburgh for 17 years and works as a chef, told Edinburgh Live:

“My business partner Maciej and I got an idea just before the first lockdown and as Leith is a great area packed with great people and progressing so fast during the last years in front of my very own eyes that I will have to say is the gem of Edinburgh.

“We bought a trailer in January 2021, then we started to renovate and while waiting for permissions and certificates Finally we have everything to start selling our hot buns on Leith.

“All our meat comes from John Henderson butcher, a four generation family run business and is prepared in our friendly pub Mother Superior based just a couple minutes from our trailer.

“I have some non profit art exhibition planned in the near future with local artists involved and also some preserved and fermented jars of goodies from Scottish flora.

"For now I'm serving a minimalistic menu, mainly steamed buns Euro – Asian style with flavours like : Pulled Pork and Cumin; Pulled Chicken and Mango; Cauliflower, coconut and turmeric.

“We also have some sweet treats. This week's one is apricot jam, blackberry, bee pollen and dandelion syrup. For non gluten containing we have a taco option.

"Air pressed coffee and tea are also available. For now we will be open Monday till Friday 9am – 5pm and planning weekends for markets and festivals.”
