Mexican, Indian, Thai, South American and a whole host of other cuisines have had their time to shine in Dublin in the past few years, with an array of restaurants opening in the city to offer authentic regional dishes to Dubs.
And it looks like the next cuisine is...Ancient Roman?
Diners may be confused as to how Ancient Roman cuisine can be introduced to the contemporary food scene of a bustling capital city but if there is one restaurant that can do the job it's Six by Nico on Molesworth Street.
Following a successful six week run of their fairy tale inspired One Upon a Time menu, the classy city centre eatery is gearing up to transport hungry Dubs back in time as it offers up a cuisine that it describes as "far from traditional".
The team at Six by Nico has unearthed ancient recipes to create a historically-adapted menu. The menu will run from Wednesday, March 16 to Sunday, April 24.
Course one of six is Cacio e Pepe, consisting of crispy pasta, black pepper and parmesan royale. The second course is white asparagus, crispy duck egg, hazelnut and brown butter.
The rest of the courses are just as experimental and exciting, consisting of ingredients and flavours that, albeit non-traditional, blend together for an enjoyable tasting experience.
Chef Nico Simeone said: "Our teams have trawled through Roman recipe books to find a way to recreate dishes for the modern foodie. Let's not forget that the Romans were resourceful and inventive with their produce, with many of their dishes revealing the origins of Italian cuisine.
"Ancient Roman cuisine featured a diverse array of unusual dishes, strange food items, and unconventional cooking experiments, and we hope that our interpretation will allow our guests to enjoy the flavours and tastes of ancient Roman cuisine today."
Six by Nico opened in Dublin in November 2021 and consistently revamps its six course menu every six weeks.
The Ancient Rome menu is priced at €45 per person with the option to add an expertly selected wine and specialist drinks pairing for an extra €39. There are also vegetarian alternatives available for each dish as well as sides for €10.
