The trattoria-style Italian restaurant, Ciao Terrazza, at the Mandarin Oriental Bangkok host executive chef Massimiliano Blasone from Mandarin Oriental, Lago di Como, as guest chef until Dec 15.
Chef Blasone’s cooking style is a blending Japanese elements with Italian fine dining. “Both kitchens work in the same way. In Japanese, as in Italian, you do not do much to the products. You let the ingredients shine. My style of cooking is fresh, healthy and citrusy,” explains the chef.
The special nine-course set menu showcases the cuisine style he is known for, with each dish served in a couple of bite-sized portions. “Our concept is ‘stuzzichini’, which is the Italian word for ‘tapas’ or small bites. You have a bit of fish crudo and a lot of salad. The dessert, though Italian, is light with custard and fruit,” adds chef Blasone. Each course adds to the harmony of the meal to create a symphony of flavours.

L~aria, the resort’s fine dining restaurant, features floor-to-ceiling windows that allow inner and outer spaces to merge seamlessly.
