Bristol is set to get its own bacon bar this month believed to be the first of its kind in the UK. The Jolly Hog is temporarily transforming its Pigsty site at Wapping Wharf into a restaurant completely dedicated to bacon, serving both savoury and sweet dishes.
The Bristol-based butcher will be hosting a three-day pop-up event this month to showcase their award-winning bacon "in unexpected and elevated ways". Customers will be able to book a slot for brunch, lunch, dinner and dessert for one weekend only - March 17-19.
On the menu, there will be everything from bacon-themed drinks like the Black Treacle Bacon Milkshake to bacon-focused desserts that have rarely ever been seen before, including streaky bacon ice cream cones and bacon cheesecake. For those looking more at the savoury dishes, there will be melt-in-your-mouth hasselback potatoes with blue cheese and black treacle bacon as well as Mexican-style street corn rolled in bacon dust.

In the announcement, The Jolly Hog said: "Consider us the Willy Wonka of bacon and step into our world of bacon imagination! Proving that bacon isn’t just for your brekkies and sarnies, we’re showing how bacon can make pretty much any dish better, and showing you how to cook with bacon in unexpected and elevated ways!"
Brothers Olly, Josh and Max front the operation, having first started The Jolly Hog as a sausage stand at events and food markets back in 2007. They've become famous for their pork quality and their products are now in almost every UK supermarket retailer, with a huge range of sausages, bacon, scotch eggs, pork pies and more.
In 2021, the pork aficionados sent Bristol wild with their pigs in blankets Christmas pop-up. The Jolly Hog sells award-winning, British outdoor bred, RSPCA assured sausages and bacon - and was awarded B-corp status last year.
