Bengaluru bids farewell to hotelier who pioneered, popularised ‘khali dosa’

BENGALURU: The belief in old Bengalureans was that only the one served at Dwaraka Hotel on Bull Temple Road was an authentic ‘khali dosa’. While almost every other hotel in Bengaluru, until about two decades ago, served it, it was Dwaraka Hotel that gave it a cult status among breakfast snacks.

The man who made his hotel a byword for khali dosa (dose) and a signature coconut chutney, Sridhar Holla, 88, died a quiet death on Tuesday. Making a humble beginning as a hotelier in 1972, this former Reserve Bank employee introduced and popularised khali dosa at his small hotel ‘Dwaraka’ on Bull Temple Road after two years of experimentation. Unlike popular dosa varieties that dripped with oil, his khali dosa was oil free, spongy and smooth.
