Beloved Irish TV chef Joe Shannon provides update on chemotherapy after terminal cancer diagnosis

TV chef, Joe Shannon, has spoken about his chemotherapy after revealing last month that he had terminal cancer.

The popular Ireland AM chef was on air this morning and said: "I’m doing great."

He told presenters Alan Hughes and Tommy Bowe: "Since I was up with ye the last time, I finished that round of chemotherapy, and I met my professor, the oncologist, Professor McCaffrey about three weeks ago.

"They were very happy with the results of that chemo. Thankfully the tumour hasn’t grown.

"And it’s kept the cancer at bay, so they gave me a little break from chemo."

But the chef added that his treatment would be continuing next week.

Joe said: "I start back on chemo on Monday."

Joe was initially diagnosed with bowel cancer in 2021 following a blockage in his intestines.

Joe revealed last month it had since become terminal, but said he "isn’t scared of death".

The upbeat Sligo man shared a joke with Alan and Tommy as he handed them a counterfeit €200 in the form of a napkin.

He said: "I just thought - you know how other media organisation stations are paying their stars a fortune? I thought I’d throw this to you.

"I’m not sure if that’s ethically right or whether there’ll be a tribunal over this."

Joe added that the response from viewers of Ireland AM has been "phenomenal".

Joe added: "It’s great to show people that on a cancer journey, life doesn’t have to stop."

He is now presenting a radio show in the mornings with his musician pal, Georgie Gorman, on Sligo’s Ocean FM.

The chef, who was on today's show preparing a prawn dish, praised the benefits of the humble air fryer.

He said: "We’re using air fryers and it has brought our electricity bills way down.

"It is well worth the investment."
