A nationwide bar chain is committed to preventing tons of fruit waste and cutting its carbon footprint by changing the garnish in a popular cocktail.
Revolution, which operates 67 venues across the UK, has banished the passionfruit trimming from its famous Pornstar Martini.
It sells more than 1.2 million Pornstar Martini and Rumtini cocktails annually, with its Revolution and Revolución de Cuba venues using an average of 36 tons of passionfruit.
The passionfruit, mainly imported from South America, is used purely as decoration, with syrups and mixers providing the full flavour.
The garnish is typically discarded by the majority of drinkers and will now be replaced by a rice paper topper promoting a sustainable message.
This latest move will save more than half a million passionfruit per year and reduce the bar group’s carbon footprint by more than 100 tons of CO2.

Removing passionfruit garnish is part of Revolution Bars Group’s ongoing commitment to sustainability and a fundamental promise is to be a Net Zero business before 2030.
It has put sustainability at the heart of any planned refurbishment, with recycling zones behind the bar, the roll out of LED lighting, a reduced number of vehicle drops.
Moves towards installing energy efficient equipment across all areas of the business are planned, along with all direct power to be supplied from a zero-carbon supplier.
