Greg Lambert, food director at SIX Baltic, has created the menu which features courses including celeriac carbonara served with Tofu Bacon and Walnut, as well as tomato tartare, served with avocado cream and corn.
"The idea behind our summer tasting evening menu is to showcase dishes inspired from all over the world that may usually be animal-based but adapted to plant-based without losing flavour," Greg said.
"I eat a lot of plant-based food and wanted to share that we can make top-quality food that is fulfilling and comforting, minus animal products such as butter, cream and eggs. I think this menu delivers that in spades.
"From our summer tasting menu, diners can expect dishes that are fun, tasty and unpretentious, and hopefully will spark ideas for cooking plant-based dishes at home.”
The summer tasting menu by SIX Baltic will be held on Tuesday, June 20 and costs £50 per person. Drinks pairing is an extra £25 per person. Bookings can be made here.
