An orphan arrived in America from Greece and started washing dishes at 11; he eventually became owner of a 100-year-old Pennsylvania restaurant

Thomas Mazias’s journey from an 11-year-old Greek orphan washing dishes to the owner of a historic Pennsylvania restaurant is a story of resilience, hard work and family tradition. After arriving in the United States in 1952, Mazias found himself at Hamilton’s Restaurant in Carlisle(Pennsylvania), where he began at the bottom of the business. Decades later, he was running the establishment himself, helping preserve a restaurant that has remained a familiar part of the town for generations. Today, Hamilton’s is known not simply for its food but for the sense of continuity it offers its customers. Its famous ‘Hot-Chee Dog,’ straightforward menu and family-centred approach have helped turn the restaurant into a local institution. According to the Dickinson College’s Food Studies programme, Mazias’s personal journey has become deeply connected with the history and identity of Hamilton’s itself.
