
In a spacious, mural-adorned room in Somerset House, the restaurateur Amy Poon is sitting on one of many tables covered in newspapers, mostly copies of the Standard. They are to protect each one from debris as the finishing touches are made to the dining room. Poon has been busy: hiring staff, designing this grand dining room, preparing a lengthy menu; reimagining one of London’s most famous restaurants, a task she eschewed until now.
“I never wanted to do this, but here I am,” she says. “It’s all these circles completing themselves. I’ve reconnected with so many people who knew my father, who worked with him, and people have been so kind in helping me get this off the ground.
