A man in his 40s has died after being restrained in a Gold Coast restaurant in front of dozens of diners on Friday night.

Police are investigating what caused his death.

A witness said the man ran into the kitchen of a Sanctuary Cove restaurant at about 7:15pm.

Ratana Leighton, owner of the Thai Chim restaurant, said she was behind the bar when the man burst in.

"He ran into the kitchen, there was hundreds of people here, it was a full house," Ms Leighton said.

She said staff tried to remove him from the kitchen but he held onto fixtures and refused to leave.

Ms Leighton said the man repeated "someone wants to kill me" as staff tried to push him out the back door.

A handful of diners stepped in to help restrain the man inside the restaurant, she said.

Ms Leighton said police arrived within minutes as the man had reportedly caused disturbances at other establishments.

She said the man appeared to lose consciousness and officers began CPR.

Paramedics arrived a short time later but the man died inside the restaurant.

Police said his death is being investigated by Queensland Police Ethical Standards Command overviewed by the Crime and Corruption Commission.

They are appealing to witnesses for information.
